5 - 2 Diet (Getting my mind ready)

Well - I shared this diet/eating plan with my aerobics classes! I told them 
I would not actually start it myself until April 15th because I was going
on vacation (enough said). Some of them have been doing it for 2 weeks
and love it! I'm starting on Monday and thought I might as well share!

Easter Dessert - Raspberry Cream Pie

For our Easter Dessert I wanted something luscious but not too time consuming. Here's the winner!

The only change I made was using a graham cracker crust instead of a pie crust. (Simply because with all of the other food I was preparing this was SO much easier!). You can find graham cracker crust recipes anywhere or here is mine:
Graham Cracker Crust
Place 4 - 6 graham crackers* and 6 - 8 vanilla wafers in your food processor. (or use all graham crackers)  Pulse to make fine crumbs. Add together in a bowl:
1 1/2 C crumbs
1/3 C melted butter (not marg)
1T (scant) sugar
Mix crackers and sugar. Slowly add butter a little at a time mixing well with a fork. Keep adding butter till just damp and crumbly. You don't want it too wet and sticky. (Just enough so it will barely stay put when u press it into pie plate). Press into 9" deep dish pie plate. Only use the amount you need! You may have crumbs

* what constitutes "a" graham cracker? For me (and this recipe) it is a long rectangular shape with 3 lines that could be broken into 4 small rectangle pieces!

PS - later I will post our entire Easter menu! It was so yummy and was entirely from recipes I found through Pinterest!!
